Hilton Colombo Residences presents ‘A Balinese Affair’, an exclusive dining experience transporting guests to the heart of Bali. This culinary event, took place on the 7 and will continue to 21 February 2025, will be led by two celebrated chefs from the Hilton Bali Resort – I Ketut Ray Suryawan and Edi Wahyudi, offering a rich array of authentic Balinese flavors.

Meet the masters behind the feast

Chef Edi is a seasoned culinary professional, with over two decades of experience in Indonesian cuisine. His signature creations include Bebek Betutu (Slow-Cooked Balinese Duck), Nasi Campur Bali (Mixed Balinese Rice), and Sate Lilit (Balinese Minced Meat Skewers), each crafted with a deep respect for Indonesia’s rich culinary heritage.

Chef Ray, a dedicated and passionate culinary professional, is known for his expertise in traditional Balinese flavors. With comprehensive experience in Indonesian cuisine, Chef Ray’s expertise shines through his signature creations, including Udang Sambal (Fried Prawn Sambal), Ayam Sere Limo (Shredded Chicken with Kaffir Lime), and Lawar Pusuh Biu (Banana Blossom Salad). A graduate of the Bali Tourism Polytechnic, Chef Ray is proud to share the vibrant flavors of Bali, offering a taste of his homeland’s culinary traditions with dishes like Soto Ayam (Balinese Chicken Soup) and Jukut Balung (Pork Rib Soup).

In addition to the chefs’ signature dishes, the chefs will feature an enticing selection of Balinese and Indonesian favourites, such as Gado-Gado (Indonesian Salad served with a Peanut Sauce dressing), Soto Ayam (Indonesian Chicken Soup), Ulam Segar Madu (Fresh Salad with Honey), Nasi Kuning (Yellow Rice), and Bubur Injin (Black Sticky Rice Pudding).

The press release said guests are invited to indulge in an unforgettable Balinese Affair featuring free flow of house-special cocktails and mocktails to complement the flavorful dishes. Priced at LKR 7,800 nett per person, this extraordinary event at Hilton Colombo Residences will showcase the best of Balinese cuisine.
